Ingredients
  

1 cup all-purpose flour

1/4 cup almond flour

1/4 cup unsalted butter, softened

1/3 cup powdered sugar

1 large egg

1 teaspoon vanilla extract

2 tablespoons rose water

1/2 teaspoon baking powder

Pinch of salt

1/2 cup finely chopped unsalted pistachios

Extra powdered sugar for dusting

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    Cream Butter and Sugar: In a mixing bowl, cream the softened butter and powdered sugar together until light and fluffy.

      Add Egg and Flavors: Beat in the egg, vanilla extract, and rose water until well combined.

        Mix Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, almond flour, baking powder, and salt.

          Combine Mixtures: Gradually add the dry ingredients to the butter mixture, mixing until just combined. Be careful not to over-mix.

            Incorporate Pistachios: Fold in the finely chopped pistachios until evenly distributed throughout the dough.

              Shape the Cookies: Using a tablespoon or small scoop, drop rounded balls of dough onto the prepared baking sheet, spacing them about 2 inches apart. Gently flatten each ball slightly with the back of a fork.

                Bake: Bake in the preheated oven for 12-15 minutes or until the edges are lightly golden. The centers may look a little soft but will firm up as they cool.

                  Cool and Dust: Remove the cookies from the oven and let them cool on the baking sheet for 5 minutes before transferring them to a wire rack. Once completely cool, dust with additional powdered sugar if desired.
