Ingredients
  

2 large English muffins, split in half

4 tablespoons pizza sauce

4 large eggs

1 cup shredded mozzarella cheese

1/2 cup cooked breakfast sausage, crumbled

1/4 cup sliced black olives

1/4 cup diced bell peppers (red, green, or yellow)

1 teaspoon Italian seasoning

Salt and pepper, to taste

Fresh basil leaves, for garnish (optional)

Olive oil spray

Instructions
 

Preheat your oven to 400°F (200°C).

    Line a baking sheet with parchment paper or lightly spray with olive oil.

      Place the English muffin halves cut-side up on the baking sheet.

        Spread 1 tablespoon of pizza sauce evenly over each muffin half.

          Sprinkle 2 tablespoons of shredded mozzarella cheese on each muffin half.

            In a non-stick skillet, cook the breakfast sausage over medium heat until browned and cooked through, then set aside to cool slightly.

              In the same skillet, crack the eggs, season with salt and pepper, and fry until the whites are set but the yolks remain runny (or cook to your preferred doneness).

                Sprinkle the cooked sausage, black olives, and bell peppers evenly over the cheese on each muffin half.

                  Carefully place one fried egg on top of each muffin half.

                    Sprinkle Italian seasoning over the toppings and finish with an extra sprinkle of mozzarella cheese.

                      Bake in the preheated oven for 10-12 minutes, or until the cheese is melted and bubbly.

                        Remove from the oven and garnish with fresh basil leaves if desired.
