Ingredients
  

1 large red bell pepper, sliced

1 large green bell pepper, sliced

1 large yellow onion, sliced

1 tablespoon olive oil

2 teaspoons chili powder

1 teaspoon cumin

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon smoked paprika

Salt and pepper to taste

Fresh lime juice (from 1 lime)

Optional: chopped fresh cilantro for garnish

Instructions
 

Prep the Veggies: Start by slicing the red and green bell peppers and onion into thin strips. This will allow them to cook evenly and get that nice char.

    Heat the Pan: In a large skillet, heat the olive oil over medium-high heat until it’s shimmering.

      Add Veggies to Skillet: Once the oil is hot, add the sliced bell peppers and onions to the skillet.

        Season the Veggies: Sprinkle the chili powder, cumin, garlic powder, onion powder, smoked paprika, salt, and pepper over the vegetables. Stir well to coat them evenly with the spices.

          Cook Until Tender: Sauté the veggies for about 5-7 minutes, stirring occasionally, until they are tender and have a nice char.

            Add Lime Juice: Squeeze fresh lime juice over the veggies right before taking them off the heat for a fresh, zesty flavor.

              Serve: Remove from heat and garnish with chopped fresh cilantro if desired. Serve alongside your favorite tortillas, or use them as a topping for bowls and salads.
