Ingredients
  

4 cups mixed greens (e.g., arugula, spinach, kale)

1 cup roasted butternut squash, diced

1 apple, thinly sliced (preferably Honeycrisp or Fuji)

½ cup dried cranberries

¼ cup crumbled feta cheese

½ cup walnuts, toasted

3 tablespoons pumpkin seeds (pepitas)

¼ red onion, thinly sliced

3 tablespoons olive oil

1 tablespoon apple cider vinegar

1 tablespoon maple syrup

Salt and pepper to taste

Instructions
 

Prepare the Ingredients:

    - Preheat the oven to 400°F (200°C) for roasting the butternut squash. Peel, seed, and dice the squash, then toss with a drizzle of olive oil, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes, or until tender and slightly caramelized. Let it cool.

      Toast the Walnuts:

        - In a dry skillet over medium heat, toast the walnuts for 5-7 minutes, stirring frequently until they are fragrant and golden. Remove from heat and let them cool.

          Make the Dressing:

            - In a small bowl, whisk together the olive oil, apple cider vinegar, maple syrup, and a pinch of salt and pepper until emulsified.

              Assemble the Salad:

                - In a large salad bowl, combine the mixed greens, roasted butternut squash, sliced apple, cranberries, crumbled feta, walnuts, and red onion.

                  Dress the Salad:
