1 head romaine lettuce, chopped

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 cup red onion, finely chopped

1/2 cup Kalamata olives, pitted and chopped

1/2 cup garbanzo beans, drained and rinsed

1/2 cup blue cheese, crumbled

1/4 cup fresh parsley, chopped

1 avocado, diced

Salt and pepper, to taste

1/4 cup red wine vinegar

1/2 cup extra virgin olive oil

1 teaspoon Dijon mustard

1 teaspoon honey

Instructions
 

Begin by preparing all your vegetables. Rinse and chop the romaine lettuce, halving the cherry tomatoes, dicing the cucumber, and finely chopping the red onion.

    In a large salad bowl, combine the chopped romaine lettuce, cherry tomatoes, cucumber, red onion, Kalamata olives, garbanzo beans, blue cheese, parsley, and diced avocado.

      In a separate smaller bowl, prepare the dressing. Whisk together the red wine vinegar, extra virgin olive oil, Dijon mustard, honey, salt, and pepper until well combined and emulsified.

        Pour the dressing over the salad and toss gently to ensure all ingredients are evenly coated.
