Ingredients
  

  • 1 medium fennel bulb chopped
  • 2 cups water
  • ¼ cup freshly squeezed lemon juice
  • 2 tablespoons honey or maple syrup
  • ½ teaspoon freshly grated lemon zest
  • ¼ teaspoon sea salt
  • a handful fresh mint leaves for garnish
  • ice cubes

Instructions

  • Bring 2 cups of water to a boil in a medium saucepan.
  • Add the chopped fennel bulb and reduce heat to a simmer for 10 minutes.
  • Remove from heat and let the fennel steep for another 10 minutes.
  • Strain the fennel-infused liquid into a pitcher, discarding solids.
  • Let the liquid cool to room temperature.
  • Mix in lemon juice, honey or maple syrup, lemon zest, and sea salt.
  • Refrigerate for at least 30 minutes to chill.
  • Serve over ice cubes and garnish with fresh mint leaves.
