  • 1 can 10 ounces diced tomatoes with green chilies
  • 4 cups chicken broth
  • ½ cup buffalo wing sauce
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • ½ teaspoon cayenne pepper
  • Salt and black pepper to taste
  • ½ cup sour cream for garnish
  • ¼ cup chopped green onions for garnish
  • ¼ cup crumbled blue cheese for garnish

Instructions

  • Heat olive oil in a large pot over medium heat and sauté diced onion for about 5 minutes until translucent.
  • Add minced garlic and cook for an additional minute until fragrant.
  • Introduce chicken breasts and pour in chicken broth, bringing to a boil before reducing to a simmer for 20 minutes.
  • Remove chicken, shred it with forks, and set aside.
  • In the same pot, add white beans, corn, diced tomatoes, buffalo sauce, cumin, paprika, cayenne, salt, and pepper; stir to combine.
