2 boneless, skinless chicken thighs, sliced

2 packs of instant ramen noodles (discard the seasoning packets)

4 cups chicken broth

2 tablespoons soy sauce

2 tablespoons Sriracha (adjust to taste)

1 tablespoon sesame oil

3 cloves garlic, minced

1 teaspoon fresh ginger, grated

1 tablespoon canola oil

1 cup baby spinach

1 carrot, julienned

1 green onion, chopped (for garnish)

1 tablespoon sesame seeds (for garnish)

Creamy Garlic Sauce:

1/2 cup mayonnaise

2 tablespoons plain yogurt (or sour cream)

2 tablespoons lemon juice

1 clove garlic, minced

Salt and pepper to taste

Instructions
 

Prepare the Creamy Garlic Sauce: In a bowl, whisk together the mayonnaise, yogurt, lemon juice, minced garlic, salt, and pepper. Adjust seasoning if needed. Set aside in the refrigerator to chill.

    Cook the Chicken: In a large pan, heat the canola oil over medium heat. Add the sliced chicken thighs and cook until browned and cooked through, about 6-8 minutes. Stir in the minced garlic and ginger, cooking for an additional minute until fragrant.
