1.5 lbs flank steak, trimmed and pounded to 1/2-inch thickness

1 cup fresh spinach

1/2 cup sundried tomatoes, finely chopped

1/2 cup feta cheese, crumbled

1/4 cup fresh basil leaves, chopped

2 cloves garlic, minced

1/4 cup balsamic vinegar

2 tablespoons olive oil

Salt and pepper to taste

Toothpicks or kitchen twine for securing pinwheels

Marinate the Steak: In a small bowl, whisk together balsamic vinegar, olive oil, minced garlic, salt, and pepper. Pour over the flank steak and let it marinate in the refrigerator for at least 30 minutes.

    Prepare the Filling: In a medium bowl, combine spinach, sundried tomatoes, feta, basil, and a sprinkle of salt and pepper. Mix until well combined.

      Assemble the Pinwheels: Remove the steak from the marinade, pat dry, and lay it flat on a clean surface. Spread the filling evenly over the steak, leaving a 1-inch border around the edges.

        Roll the Steak: Starting from one end, carefully roll the steak tightly into a log. Secure the edges with toothpicks or tie it with kitchen twine to prevent the filling from spilling out.

          Cook the Pinwheels: Preheat your grill or a skillet over medium-high heat. Sear the pinwheel for about 6-8 minutes on each side, or until it reaches your desired doneness (medium-rare is typically around 135°F).
