1.5 lbs flank steak

2 tablespoons olive oil

3 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon smoked paprika

1 teaspoon chili powder

1 teaspoon salt

1/2 teaspoon black pepper

Juice of 2 limes

10 corn tortillas

1 cup chopped fresh cilantro

1 avocado, sliced

1 cup diced red onion

1 cup diced tomatoes

Salsa or hot sauce of choice

Instructions
 

Marinate the Steak: In a medium bowl, whisk together olive oil, minced garlic, cumin, smoked paprika, chili powder, salt, black pepper, and lime juice. Coat the flank steak in the marinade, cover, and let sit in the refrigerator for at least 30 minutes (or up to 2 hours for more flavor).

    Prepare the Grill: Preheat your grill (or a grill pan) to medium-high heat.

      Grill the Steak: Remove the flank steak from the marinade and dispose of the excess marinade. Grill the steak for 5-7 minutes on each side for medium-rare, or until it reaches your desired doneness. Use a meat thermometer to check for an internal temperature of 130°F for medium-rare.

        Rest and Slice: Once cooked, remove the steak from the grill and let it rest for about 10 minutes. After resting, slice the steak thinly against the grain to ensure tenderness.

          Warm the Tortillas: While the steak is resting, warm the corn tortillas on the grill or in a dry skillet for about 30 seconds on each side until soft and pliable.

            Assemble the Tacos: Place a few slices of flank steak onto each tortilla. Top with chopped cilantro, avocado slices, red onion, and diced tomatoes.

              Finish with Salsa: Drizzle with your favorite salsa or hot sauce to taste, and serve immediately.
