Ingredients
  

  • 4 large bell peppers
  • 1 pound ground beef
  • 1 cup cooked rice
  • 1 can diced tomatoes
  • 1 small onion
  • 2 cloves garlic
  • 1 teaspoon Italian seasoning
  • 1 teaspoon smoked paprika
  • to taste salt
  • to taste black pepper
  • 1 cup shredded cheese
  • optional fresh parsley or basil

Instructions

  • Preheat the oven to 375°F (190°C).
  • Slice the tops off the bell peppers and remove seeds and membranes.
  • Chop the tops of the peppers and set aside.
  • Heat olive oil in a skillet over medium heat and sauté the diced onion until translucent.
  • Add minced garlic and chopped pepper tops, sauté for 2 minutes.
  • Add ground beef, cook until browned, about 5-7 minutes, and drain excess fat.
  • Stir in cooked rice, diced tomatoes, Italian seasoning, smoked paprika, salt, and pepper.
  • Spoon the mixture into the hollowed-out bell peppers.
  • Arrange peppers in a baking dish, sprinkle cheese on top if desired.
  • Cover with foil and bake for 25 minutes, then remove foil and bake for an additional 10-15 minutes.

Notes

For a leaner option, substitute ground turkey for the beef.
