Ingredients
  

1 cup all-purpose flour

2 tablespoons granulated sugar

1 tablespoon baking powder

1/2 teaspoon salt

1 cup buttermilk (or milk mixed with 1 tablespoon lemon juice)

1 large egg

2 tablespoons unsalted butter, melted

1 teaspoon vanilla extract

Optional toppings: maple syrup, fresh fruits, whipped cream

Instructions
 

In a large bowl, whisk together the flour, sugar, baking powder, and salt until combined.

    In another bowl, mix the buttermilk, egg, melted butter, and vanilla extract until smooth.

      Pour the wet ingredients into the dry ingredients and stir gently. Be careful not to overmix; lumpy batter is okay.

        Preheat a non-stick skillet or griddle over medium heat. Lightly grease with butter or cooking spray.

          For each pancake, pour about 1/4 cup of batter onto the skillet. Cook until bubbles form on the surface and the edges appear set, about 2-3 minutes.

            Flip the pancakes and cook for an additional 1-2 minutes until golden brown and cooked through.

              Transfer the pancakes to a plate and keep warm. Repeat with the remaining batter.
