Ingredients
  

1 cup all-purpose flour

2 tablespoons sugar

1 tablespoon baking powder

1/2 teaspoon salt

1 cup milk (whole or buttermilk for extra fluffiness)

1 large egg

2 tablespoons unsalted butter, melted

1 teaspoon vanilla extract

Optional toppings: maple syrup, fresh berries, whipped cream, or chocolate chips

Instructions
 

In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt until well combined.

    In a separate bowl, beat the egg and then add the milk, melted butter, and vanilla extract. Stir well to combine.

      Pour the wet ingredients into the dry ingredients and stir gently. Be careful not to overmix; some lumps are fine.

        Preheat a non-stick skillet or griddle over medium heat. Lightly grease with a bit of butter or cooking spray.

          Pour about 1/4 cup of batter onto the hot skillet for each pancake. Cook until bubbles form on the surface and the edges look set (about 2-3 minutes).

            Flip the pancakes and cook for an additional 1-2 minutes until golden brown.

              Transfer to a plate and keep warm while you repeat with the remaining batter.
