Ingredients
  

1 cup water

1/2 cup unsalted butter, cut into pieces

1/4 teaspoon salt

1 cup all-purpose flour

4 large eggs

1 teaspoon vanilla extract

Oil for frying (canola or vegetable)

1 cup powdered sugar (for glaze)

2 tablespoons milk (for glaze)

1/2 teaspoon vanilla extract (for glaze)

Instructions
 

In a medium saucepan, combine water, butter, and salt. Bring to a boil over medium heat until the butter melts completely.

    Remove from heat and stir in the flour all at once. Stir vigorously until the mixture forms a smooth ball that pulls away from the sides of the pan.

      Let the mixture cool for about 5 minutes. Then, add the eggs one at a time, mixing well after each addition. Finally, stir in the vanilla extract until smooth and glossy.

        Transfer the dough to a piping bag fitted with a large star tip.

          In a deep skillet or Dutch oven, heat oil to 350°F (175°C).

            Pipe 4-inch strips of dough onto a lined baking sheet, then carefully cut them with kitchen scissors.

              Gently place the dough strips into the hot oil and fry a few at a time, about 2-3 minutes on each side, or until golden brown. Keep an eye on the temperature to ensure even cooking.

                Using a slotted spoon, remove crullers and drain them on paper towels.

                  For the glaze, whisk together powdered sugar, milk, and vanilla extract until smooth. Dip the top of each cruller into the glaze and allow to set on a cooling rack.
