4 ripe bananas, peeled and sliced diagonally

1/2 cup corn starch

1/2 teaspoon baking powder

1/2 teaspoon salt

1 teaspoon cinnamon

1 cup cold sparkling water

Oil (for frying)

1/4 cup unsalted butter

1/4 cup brown sugar

1 teaspoon vanilla extract

1/2 teaspoon ground cinnamon (for the sauce)

Pinch of salt

Prepare the Batter: In a mixing bowl, combine the flour, corn starch, baking powder, salt, and 1 teaspoon cinnamon. Gradually whisk in the cold sparkling water until you have a smooth batter. Set aside.

    Heat the Oil: In a deep skillet or frying pan, pour enough oil to cover the bottom by about 1 inch. Heat the oil over medium-high heat until it reaches 350°F (175°C).
