Ingredients

1 jar (16 oz) dill pickles, sliced into chips

1 cup all-purpose flour

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1/2 teaspoon cayenne pepper (optional for heat)

2 large eggs

1 cup buttermilk

1 1/2 cups seasoned breadcrumbs (or panko for extra crunch)

Vegetable oil for frying

Salt and pepper to taste

Ranch dressing or your favorite dipping sauce, for serving

Instructions

Prep the Pickles: Drain the pickle slices and pat them dry with paper towels. Ensure they are thoroughly dried to avoid excess moisture when frying.

Prepare the Breading Station: In a shallow dish, combine the flour, garlic powder, onion powder, smoked paprika, cayenne pepper, salt, and pepper. Mix well. In another bowl, whisk together the eggs and buttermilk until combined. In a third dish, place the seasoned breadcrumbs.

Bread the Pickles: Dip each pickle slice first in the flour mixture, coating evenly. Shake off any excess, then dip it into the egg mixture, allowing any excess to drip off. Finally, coat the pickle slice in the breadcrumbs, pressing gently to adhere. Place the breaded pickles on a plate and repeat until all are breaded.

Heat the Oil: In a large skillet or deep fryer, heat about 2 inches of vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test if the oil is ready by dropping a small piece of breading into the oil; it should sizzle immediately.

Fry the Pickles: Carefully add the breaded pickle slices in small batches, ensuring not to overcrowd the pan. Fry for about 2-3 minutes on each side or until golden brown and crispy. Use a slotted spoon to remove the fried pickles and transfer them to a paper towel-lined plate to absorb excess oil.

Serve: Sprinkle with a little salt while still hot. Serve warm with ranch dressing or your favorite dipping sauce for a delicious treat!
