2 large flour tortillas

1 cup mixed fresh fruit (strawberries, kiwi, mango, pineapple), diced

½ cup Greek yogurt (or coconut yogurt for a dairy-free option)

2 tablespoons honey or agave syrup

1 teaspoon vanilla extract

¼ teaspoon cinnamon

2 tablespoons shredded coconut (optional)

Fresh mint leaves for garnish

Lime wedges for serving

Instructions
 

In a mixing bowl, combine the mixed fresh fruit and set aside.

    In a separate bowl, mix the Greek yogurt, honey or agave syrup, vanilla extract, and cinnamon until smooth.

      Heat each tortilla in a non-stick pan over medium heat for about 30 seconds on each side until warm and pliable.

        Assemble the tacos by spreading a generous dollop of the yogurt mixture onto the center of each tortilla.
