Ingredients

4 slices of thick-cut bread (sourdough or your favorite)

4 tablespoons unsalted butter, softened

2 cloves of garlic, minced

1 teaspoon dried oregano

1 teaspoon dried parsley

1 cup shredded mozzarella cheese

1 cup shredded sharp cheddar cheese

1/2 teaspoon salt

1/4 teaspoon black pepper

Optional: red pepper flakes for extra kick

Instructions

In a small mixing bowl, combine the softened butter, minced garlic, dried oregano, dried parsley, salt, and black pepper. Mix until well combined to create a garlic herb spread.

Heat a skillet or griddle over medium heat. While it warms up, spread a generous layer of the garlic herb spread on one side of each slice of bread.

Place two slices of bread, spread-side down, onto the skillet. Sprinkle half of the mozzarella and half of the cheddar cheese evenly over the slices.

Top with the remaining slices of bread, spread-side up. Cook for about 3-4 minutes, or until the bottom is golden and crispy.

Carefully flip the sandwiches using a spatula, and press gently to ensure even grilling. Cook for an additional 3-4 minutes on the other side, allowing the cheese to melt and the bread to become golden brown.

Once both sides are crispy and the cheese is melted, remove the grilled cheese sandwiches from the skillet. Allow them to cool for a minute before slicing in half.

Serve warm with a side of marinara for dipping or enjoy them as is!
