1 lb sirloin steak, cut into 1-inch cubes

4 medium-sized potatoes, diced into 1-inch pieces

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon dried thyme

Salt and black pepper, to taste

Fresh parsley, chopped (for garnish)

Olive oil (for cooking)

Instructions
 

Preheat the skillet: Heat a large cast-iron skillet or heavy-bottomed pan over medium-high heat and add a drizzle of olive oil.

    Cook the potatoes: Add the diced potatoes to the skillet, season with salt and pepper, and sprinkle with smoked paprika. Cook, stirring occasionally, for about 10-12 minutes or until they are golden brown and fork-tender. Remove the potatoes from the skillet and set them aside.

      Sear the steak: In the same skillet, add the cubed steak and season with salt, pepper, and dried thyme. Sear the steak for about 4-5 minutes, or until it's browned on all sides and cooked to your desired doneness.

        Add the garlic and butter: Reduce the heat to medium-low. Push the steak to the side of the skillet and add the butter and minced garlic to the empty space. Allow the butter to melt, and let the garlic sauté for about 1-2 minutes until fragrant.
