Garlic Butter Steak Bites and Potatoes

1 lb steak (sirloin, ribeye, or your choice), cut into bite-sized pieces

2 cups baby potatoes, halved

4 tablespoons unsalted butter

4 cloves garlic, minced

1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried)

1 tablespoon fresh thyme, chopped (or 1 teaspoon dried)

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Potatoes: In a large pot, bring salted water to a boil. Add the halved baby potatoes and boil for about 10-15 minutes, or until fork-tender. Drain and set aside.

    Season the Steak Bites: In a bowl, season the steak pieces generously with salt and pepper.

      Sear the Steak Bites: In a large skillet over medium-high heat, add 1 tablespoon olive oil. Once hot, add the steak bites in a single layer. Sear for about 2-3 minutes per side for medium rare (cook longer if desired). Remove the steak bites from the skillet and transfer them to a plate, leaving the juices in the pan.

        Cook the Potatoes: In the same skillet, add another tablespoon of olive oil and the boiled potatoes. Cook for about 5-7 minutes, turning occasionally, until crispy and golden.

          Add Garlic and Herbs: Push the potatoes to the side of the skillet, reduce heat to medium, and melt the butter in the pan. Add the minced garlic and chopped rosemary and thyme. Sauté for 1-2 minutes until fragrant.

            Combine Ingredients: Return the steak bites to the skillet, and toss everything together to combine, allowing the flavors to meld for another 1-2 minutes.

              Serve: Remove from heat, garnish with freshly chopped parsley, and serve hot.
