1 lb (450g) sirloin steak, cut into 1-inch cubes

1 lb (450g) baby potatoes, halved

4 tablespoons (½ stick) unsalted butter

4 cloves garlic, minced

1 teaspoon fresh rosemary, chopped (or ½ teaspoon dried)

1 teaspoon fresh thyme, chopped (or ½ teaspoon dried)

Salt and black pepper, to taste

1 tablespoon olive oil

Fresh parsley, chopped for garnish (optional)

Lemon wedges, for serving (optional)

Instructions
 

Prep the Potatoes: In a large pot, add the halved baby potatoes and cover with cold water. Add a generous pinch of salt. Bring to a boil and cook for about 15-20 minutes or until the potatoes are fork-tender. Drain and set aside.

    Sear the Steak Bites: In a large skillet, heat the olive oil over medium-high heat. Season the steak cubes with salt and black pepper. Once the oil is shimmering, add the steak bites in batches (do not overcrowd the skillet) and sear for about 2-3 minutes on each side until they are browned and cooked to your desired level of doneness. Remove the steak from the skillet and set aside.

      Prepare the Garlic Butter Sauce: In the same skillet, reduce the heat to medium-low. Add the butter and allow it to melt. Once melted, add the minced garlic, rosemary, and thyme. Cook for about 1-2 minutes, stirring continuously, until the garlic is fragrant but not burnt.

        Combine Potatoes and Steak: Add the cooked potatoes back to the skillet with the garlic butter and toss gently to coat them. Return the steak bites to the skillet and toss everything together, allowing the steak and potatoes to absorb the buttery garlic flavor. Cook for an additional minute just to heat through.
