1 lb sirloin steak, cut into 1-inch cubes

1 lb baby potatoes, halved

4 tablespoons unsalted butter

5 cloves garlic, minced

1 teaspoon fresh rosemary, chopped

1 teaspoon fresh thyme, chopped

Salt and pepper, to taste

1 tablespoon olive oil

Fresh parsley, chopped (for garnish)

Prepare the Potatoes: Start by boiling the halved baby potatoes in salted water for about 10-12 minutes until fork-tender. Drain and set aside.

    Sear the Steak: In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Season the steak bites with salt and pepper. Once the pan is hot, add the steak cubes in a single layer and sear for about 2-3 minutes on each side until browned. Do not overcrowd the pan; you might need to do this in batches. Remove from skillet and set aside.

      Flavor the Butter: In the same skillet, lower the heat to medium and add the butter. Once melted, add the minced garlic, rosemary, and thyme. Sauté for about 1 minute until fragrant, stirring constantly to avoid burning the garlic.

        Crisp the Potatoes: Increase the heat back to medium-high. Add the boiled potatoes to the skillet and toss them in the garlic butter until they are golden brown and crispy, about 5-7 minutes.
