  • 2 cans white beans cannellini or great northern
  • 4 cloves garlic
  • ¼ cup freshly squeezed lemon juice
  • ¼ cup extra virgin olive oil
  • 1 tsp freshly grated lemon zest
  • ½ tsp sea salt
  • ¼ tsp freshly ground black pepper
  • ¼ tsp crushed red pepper flakes
  • fresh parsley for garnish

Instructions

  • Heat 1 tablespoon of olive oil in a medium saucepan over medium heat.
  • Add minced garlic and sauté for 2-3 minutes until fragrant and golden.
  • Remove from heat and let cool slightly.
  • In a large bowl, combine drained white beans, sautéed garlic, lemon juice, lemon zest, salt, black pepper, and red pepper flakes.
  • Mash the mixture with a fork or potato masher to your desired consistency.
  • Drizzle in remaining olive oil while mashing until creamy and well blended.
