Garlic Mushroom Chicken Bites

Ingredients
  

1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces

8 oz (225g) cremini mushrooms, sliced

4 cloves garlic, minced

1/4 cup (60ml) chicken broth

2 tbsp olive oil

1 tbsp butter

1 tsp dried thyme

1/2 tsp red pepper flakes (optional)

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions
 

Marinate the Chicken: In a bowl, season the chicken pieces with salt, pepper, and thyme. Let it marinate while you prepare the other ingredients.

    Sauté the Mushrooms: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced mushrooms and cook for about 5-7 minutes, until golden brown. Remove the mushrooms from the skillet and set aside.

      Cook the Chicken: In the same skillet, add the remaining olive oil and butter. Once hot, add the marinated chicken bites. Cook for about 6-8 minutes, turning occasionally until fully cooked and golden on all sides.

        Add Garlic and Broth: Add the minced garlic to the skillet and sauté for 1 minute until fragrant. Then pour in the chicken broth and stir thoroughly to combine everything. Let it simmer for another 2-3 minutes until the sauce slightly thickens.

          Combine and Finish: Return the sautéed mushrooms to the skillet, mixing them with the chicken and sauce. Cook for an additional 2 minutes so the flavors meld together.

            Garnish and Serve: Remove from heat, sprinkle with chopped parsley, and serve with lemon wedges on the side for an extra zing.
