8 oz (225g) fresh mushrooms (cremini or button), sliced

3 tablespoons olive oil

3 cloves garlic, minced

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

1 tablespoon balsamic vinegar

Salt and pepper to taste

4 slices of rustic bread (sourdough or ciabatta work well)

2 tablespoons unsalted butter

¼ cup grated Parmesan cheese (optional)

Fresh parsley, chopped (for garnish)

Instructions
 

Sauté the Mushrooms: In a large skillet, heat the olive oil over medium heat. Add the sliced mushrooms and sauté for about 5-7 minutes until they are golden brown and any liquid they release has evaporated.

    Add Garlic and Herbs: Stir in the minced garlic and thyme. Sauté for another 1-2 minutes until the garlic is fragrant, ensuring not to burn it.

      Season the Mixture: Pour in the balsamic vinegar and stir to combine. Season with salt and pepper to taste. Cook for an additional 1 minute, then remove the skillet from heat.

        Prepare the Toast: While the mushrooms are cooking, heat a separate skillet or griddle over medium heat. Spread butter on one side of each slice of bread. Once the skillet is hot, place the slices, butter side down, onto the skillet and toast until golden brown, about 2-3 minutes. Flip and toast the other side until lightly golden.

          Assemble the Toast: Place the toasted bread on a serving platter. Spoon the sautéed garlic mushroom mixture generously over each slice.
