1 lb chicken tenders

1 cup grated Parmesan cheese

1 cup breadcrumbs (Panko preferred for extra crunch)

4 cloves garlic, minced

1 teaspoon dried Italian herbs (oregano, thyme, basil)

2 large eggs

1 tablespoon Dijon mustard

1 teaspoon salt

1/2 teaspoon black pepper

1/4 teaspoon cayenne pepper (optional for heat)

1/4 cup fresh parsley, chopped (for garnish)

Olive oil spray or 1/4 cup olive oil (for baking/frying)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.

    Prepare the Egg Mixture: In a shallow bowl, whisk together the eggs and Dijon mustard until well combined.

      Prepare the Coating: In another bowl, combine the grated Parmesan cheese, breadcrumbs, minced garlic, Italian herbs, salt, black pepper, and cayenne pepper. Mix until the ingredients are evenly distributed.

        Coat the Chicken: Dip each chicken tender first into the egg mixture, allowing the excess to drip off. Then, coat it in the Parmesan breadcrumb mixture, pressing gently to ensure an even covering.

          Arrange on Baking Sheet: Place the coated chicken tenders on the prepared baking sheet. If desired, lightly spray the tops with olive oil for extra crispiness.

            Bake the Chicken: Bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and the coating is golden brown and crispy. If frying instead, heat olive oil in a skillet over medium heat and cook the chicken tenders for about 3-4 minutes on each side until golden brown.

              Garnish and Serve: Once cooked, remove from the oven and let cool slightly. Garnish with chopped fresh parsley before serving.
