  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 tablespoon ground ginger
  • 1 tablespoon ground cinnamon
  • ½ teaspoon ground cloves
  • ½ teaspoon salt
  • ¾ cup unsalted butter softened
  • ¾ cup packed brown sugar
  • 1 large egg
  • ½ cup unsulfured molasses
  • 1 teaspoon pure vanilla extract

Instructions

  • Combine flour, baking soda, ginger, cinnamon, cloves, and salt in a bowl.
  • Cream butter and brown sugar until light and fluffy.
  • Add egg, molasses, and vanilla to the butter-sugar mixture and blend well.

  • Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  • Roll out one disc of dough to ¼ inch thickness and cut out shapes.
  • Place cookies on baking sheets with space between them.
  • Bake for 8-10 minutes until edges are set and centers are soft.
