Ingredients
  

1 cup quinoa, rinsed

2 cups vegetable broth

1 cup cherry tomatoes, halved

1 avocado, diced

1 cup black beans, drained and rinsed

1 bell pepper (any color), diced

1 small red onion, finely chopped

1 cup fresh corn (or frozen and thawed)

2 tablespoons olive oil

1 lime, juiced

1 teaspoon cumin

Salt and pepper to taste

Fresh cilantro, for garnish

Instructions
 

In a medium saucepan, bring the vegetable broth to a boil. Add the rinsed quinoa, reduce to a simmer, and cover. Cook for about 15 minutes or until the quinoa is fluffy and all the liquid is absorbed. Remove from heat and let it cool slightly.

    In a large mixing bowl, combine the cherry tomatoes, diced avocado, black beans, bell pepper, red onion, and corn.

      In a small bowl, whisk together the olive oil, lime juice, cumin, salt, and pepper. Pour this dressing over the vegetable mixture and toss gently to combine.

        Add the cooked quinoa to the vegetable mixture and fold gently until everything is well mixed.

          Taste and adjust seasoning if needed, then garnish with fresh cilantro.

            Serve the Sunrise Quinoa Bowl warm or chilled. Enjoy your nutritious and colorful meal!
