Ingredients
  

4 slices of sourdough bread

4 large eggs

4 slices of cheddar cheese

4 slices of crispy bacon

1 ripe avocado, sliced

1 tbsp butter

Salt and pepper to taste

Fresh arugula (optional)

Hot sauce (optional)

Instructions
 

Cook the Bacon: In a large skillet or griddle, cook the bacon over medium heat until crispy. Transfer to a paper towel-lined plate to drain excess grease.

    Toast the Bread: In the same skillet, add a little butter and toast the slices of sourdough bread on both sides until golden brown. Remove from the skillet and set aside.

      Fry the Eggs: In the same skillet, crack in the eggs, one at a time. Cook sunny-side up or to your preferred doneness. Season with salt and pepper.

        Melt the Cheese: Once the eggs are almost cooked, place a slice of cheddar cheese on top of each egg. Cover the skillet with a lid for a minute to help the cheese melt.

          Assemble the Sandwich: On the toasted sourdough, layer the crispy bacon, a slice of avocado, a cheesy egg, and fresh arugula if using. Drizzle with hot sauce if desired.
