1 tablespoon brown sugar

1 tablespoon toasted sesame oil

2 green onions, finely chopped (plus extra for garnish)

1 tablespoon fresh ginger, finely grated

1 teaspoon sesame seeds (optional, for garnish)

10 bamboo skewers, soaked in water for 30 minutes

Prepare the Marinade: In a medium mixing bowl, combine soy sauce, mirin, rice vinegar, brown sugar, toasted sesame oil, grated ginger, and chopped green onions. Whisk thoroughly until the brown sugar has completely dissolved and the mixture is well blended.
