1/2 red onion, finely chopped

1 ripe avocado, diced

1 small jalapeño, seeded and minced

1/4 cup fresh cilantro, chopped

Juice of 1 lime

Salt and pepper to taste

For the Creamy Garlic Sauce:

1/2 cup mayonnaise

2 tablespoons Greek yogurt

2 tablespoons lemon juice

2 cloves garlic, minced

Salt and pepper to taste

For Serving:

2 cups cooked brown rice or quinoa

Lime wedges for garnish

Extra cilantro for garnish

Marinate the Shrimp: In a mixing bowl, combine olive oil, minced garlic, paprika, cumin, salt, pepper, and lime juice. Add the shrimp and toss to coat evenly. Marinate for at least 15 minutes while preparing the other components.

    Prepare the Corn Salsa: In another bowl, mix together the corn, red onion, avocado, jalapeño, cilantro, lime juice, salt, and pepper. Gently toss to combine, being careful not to mash the avocado. Set aside.

      Make the Creamy Garlic Sauce: In a small bowl, whisk together mayonnaise, Greek yogurt, lemon juice, minced garlic, salt, and pepper until smooth and well combined. Adjust seasoning if necessary.
