Ingredients

1 lb ground beef

1 onion, finely chopped

2 cloves garlic, minced

1 bell pepper, finely diced (any color)

1 tsp cumin

1 tsp paprika

½ tsp chili powder (optional)

Salt and pepper to taste

1 cup olives, chopped (green or black)

½ cup raisins (optional, for a sweet touch)

1 package of empanada dough discs (circular)

1 egg, beaten (for egg wash)

Oil for frying (or you can bake for a healthier option)

Instructions

Prepare Filling: In a large skillet over medium heat, add a splash of oil and sauté the onion and bell pepper until soft, about 5 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.

Brown the Beef: Add the ground beef to the skillet, breaking it apart with a spoon. Cook until browned, about 8-10 minutes. Drain excess fat if necessary.

Season: Stir in the cumin, paprika, chili powder, salt, and pepper. Mix well and cook for an additional 2-3 minutes. Add the chopped olives and raisins (if using) and combine. Remove from heat and allow to cool slightly.

Prepare Empanadas: Preheat your oven to 375°F (190°C) if baking. If frying, heat oil in a deep pan. Take an empanada dough disc and place a tablespoon of the beef filling in the center.

Seal the Empanadas: Fold the disc over to create a half-moon shape. Press the edges to seal, using a fork to crimp the edges for a decorative touch.

Cook: For baking, brush the tops with beaten egg and place on a parchment-lined baking sheet. Bake for 20-25 minutes or until golden brown. For frying, gently drop the empanadas in hot oil and fry for 3-4 minutes on each side until golden and crispy.

Serve: Allow empanadas to cool slightly before serving. Enjoy with salsa, guacamole, or your favorite dipping sauce!
