Ground Beef Zucchini Casserole

Ingredients
  

1 pound ground beef

4 medium zucchinis, sliced

1 medium onion, chopped

2 cloves garlic, minced

1 can (14.5 oz) diced tomatoes, drained

1 cup ricotta cheese

1 cup mozzarella cheese, shredded

1 cup grated Parmesan cheese

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper to taste

Olive oil for sautéing

1/2 cup breadcrumbs (optional, for topping)

Instructions
 

Preheat your oven to 375°F (190°C).

    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic, cooking until soft and fragrant, about 3-4 minutes.

      Add the ground beef to the skillet, breaking it apart with a spatula. Season with salt, pepper, oregano, and basil. Cook until the beef is browned, about 5-7 minutes. Drain any excess fat if necessary.

        Stir in the drained diced tomatoes and cook for an additional 2 minutes.

          In a large mixing bowl, combine the ricotta cheese, half of the mozzarella cheese, and half of the Parmesan cheese. Mix well to combine.

            In a greased 9x13-inch casserole dish, layer half of the sliced zucchini on the bottom.

              Spread half of the beef mixture over the zucchini. Then, dollop half of the ricotta mixture on top.

                Repeat the layering process with the remaining zucchini, beef, and ricotta mixtures.

                  Top the casserole with the remaining mozzarella and Parmesan cheeses. If desired, sprinkle breadcrumbs over the top for a crispy finish.

                    Cover the casserole dish with aluminum foil (to prevent burning) and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.

                      Remove from the oven and let the casserole cool for 5-10 minutes before slicing and serving.
