1 lb ground turkey

2 large bell peppers (any color, diced)

1 medium onion (diced)

3 cloves garlic (minced)

1 tsp ground cumin

1 tsp smoked paprika

½ tsp chili powder

½ tsp salt (or to taste)

¼ tsp black pepper

2 tbsp olive oil

1 cup canned diced tomatoes (with juices)

1 cup corn (frozen or canned)

½ cup fresh cilantro (chopped, for garnish)

1 lime (cut into wedges, for serving)

Instructions
 

Heat the Oil: In a large skillet, heat the olive oil over medium heat. Once hot, add the diced onion and sauté until translucent, about 3-4 minutes.

    Add Garlic and Spices: Stir in the minced garlic, ground cumin, smoked paprika, chili powder, salt, and black pepper. Cook for another minute until fragrant.

      Cook the Turkey: Add the ground turkey to the skillet, breaking it apart with a spatula. Cook until browned and cooked through, about 5-7 minutes.

        Incorporate Peppers and Tomatoes: Once the turkey is cooked, add the diced bell peppers and canned tomatoes (with juices). Stir to combine and cook for another 5-6 minutes until the peppers are slightly softened.

          Mix in Corn: Fold in the corn and allow the mixture to heat through for another 2-3 minutes. Taste and adjust seasoning if necessary.

            Garnish and Serve: Remove from heat and sprinkle with fresh cilantro. Serve with lime wedges on the side for an extra zest.
