Ingredients
  

1 lb ground turkey

2 medium sweet potatoes, peeled and diced

1 red bell pepper, chopped

1 small onion, diced

2 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon ground cumin

1 teaspoon dried oregano

Salt and pepper to taste

2 tablespoons olive oil

1 cup fresh spinach (optional)

Fresh cilantro or parsley for garnish

Instructions
 

Prepare the Sweet Potatoes: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced sweet potatoes and season with salt and pepper. Cook for about 10-15 minutes, stirring occasionally, until they are tender and lightly browned. Remove from the skillet and set aside.

    Cook the Turkey: In the same skillet, add the remaining tablespoon of olive oil. Add the chopped onion and red bell pepper, cooking for 3-4 minutes until softened. Then, add the garlic and cook for an additional minute until aromatic.

      Add the Turkey: Increase the heat to medium-high and add the ground turkey to the skillet. Break it apart with a spatula and cook until browned, about 5-7 minutes.

        Season: Once the turkey is fully cooked, add the smoked paprika, cumin, oregano, and any additional salt and pepper. Mix well to ensure the turkey is evenly coated with the spices.

          Combine Everything: Return the cooked sweet potatoes to the skillet and stir to combine. If using, add the spinach and cook until it is wilted, about 2 minutes.

            Serve: Remove from heat, garnish with fresh cilantro or parsley, and serve hot.
