Ingredients
  

1 lb ground turkey

2 medium sweet potatoes, diced into small cubes

1 bell pepper (any color), diced

1 small onion, finely chopped

2 cloves garlic, minced

1 tsp smoked paprika

1 tsp cumin

1/2 tsp red pepper flakes (optional, for heat)

2 tbsp olive oil

Salt and pepper to taste

1 cup black beans, rinsed and drained

1/2 cup corn (canned or frozen)

Fresh cilantro or parsley for garnish

Lime wedges for serving

Instructions
 

Prepare the Sweet Potatoes: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced sweet potatoes and season with salt and pepper. Cook for about 10–12 minutes, stirring occasionally, until they are tender and golden brown.

    Cook the Turkey: In the same skillet, push the sweet potatoes to one side and add the remaining tablespoon of olive oil. Increase the heat to medium-high, and add the ground turkey. Season with smoked paprika, cumin, and red pepper flakes, cooking until the turkey is browned and fully cooked, about 5–7 minutes.

      Add Vegetables: Mix the turkey and sweet potatoes together in the skillet. Add the chopped onion, bell pepper, and minced garlic. Sauté everything together for another 5 minutes, or until the vegetables are softened.

        Incorporate Beans and Corn: Stir in the black beans and corn, cooking for an additional 3–4 minutes until everything is heated through. Taste and adjust seasoning with more salt and pepper if needed.

          Serve: Remove from heat, garnish with freshly chopped cilantro or parsley, and serve with lime wedges on the side for an added zest.
