Ham and Potato Casserole

Ingredients
  

4 medium-sized russet potatoes, peeled and thinly sliced

2 cups cooked ham, diced (preferably leftover ham)

1 cup shredded sharp cheddar cheese

1 cup sour cream

1 cup milk

1 medium onion, finely chopped

2 garlic cloves, minced

1 teaspoon dried thyme

½ teaspoon black pepper

1 teaspoon salt

1 tablespoon olive oil

1 cup breadcrumbs (for topping)

2 tablespoons melted butter (for topping)

Instructions
 

Preheat your oven to 350°F (175°C).

    In a large skillet over medium heat, add olive oil. Sauté the chopped onion until translucent, about 5 minutes. Add the minced garlic and cook for an additional 1-2 minutes until fragrant.

      In a large mixing bowl, combine the sour cream, milk, thyme, salt, and black pepper. Mix well.

        Grease a 9x13-inch baking dish with butter or non-stick spray.

          Layer half of the sliced potatoes evenly on the bottom of the baking dish. Top with half of the sautéed onion and garlic mixture, followed by half of the diced ham. Sprinkle with half of the cheddar cheese.

            Pour half of the sour cream mixture over the layered ingredients.

              Repeat the layering process with the remaining potatoes, onion and garlic mixture, diced ham, and cheddar cheese. Finish with the remaining sour cream mixture.

                In a small bowl, combine the breadcrumbs with melted butter, then sprinkle this mixture evenly over the top of the casserole.

                  Cover the baking dish with aluminum foil and bake in the preheated oven for 45 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the top is golden brown and the potatoes are tender when pierced with a fork.
