1 pre-made pie crust (9 inches)

1 cup crushed pineapple, drained

1 cup coconut cream

3/4 cup sugar

3 large eggs

1/4 cup all-purpose flour

1 tsp vanilla extract

1/4 tsp salt

1/2 cup shredded coconut (sweetened or unsweetened)

1/2 cup chopped macadamia nuts (optional)

Whipped cream (for serving)

Instructions
 

Preheat the oven: Preheat your oven to 350°F (175°C).

    Prepare the crust: Place the pre-made pie crust into a 9-inch pie pan. Crimp the edges if desired. Prick the bottom with a fork to prevent bubbling.

      Mix the filling: In a large mixing bowl, whisk together the sugar and flour until well combined. Add the eggs one at a time, beating after each addition. Stir in the coconut cream, vanilla extract, salt, crushed pineapple, shredded coconut, and chopped macadamia nuts (if using) until fully incorporated.

        Pour the filling: Pour the tropical filling into the prepared pie crust, spreading it evenly.

          Bake the pie: Place the pie in the preheated oven and bake for 35-40 minutes, or until the filling is set and the edges are lightly golden. You can check for doneness by inserting a knife into the center; it should come out clean.

            Cool: Once baked, remove the pie from the oven and let it cool to room temperature. Then chill in the refrigerator for at least 2 hours before serving to let the flavors meld.
