4 chicken thighs (bone-in, skin-on for extra flavor)

1 cup soy sauce

½ cup brown sugar

½ cup pineapple juice

2 cloves garlic, minced

1 inch fresh ginger, grated

2 tablespoons rice vinegar

1 tablespoon sesame oil

2 green onions, chopped (for garnish)

1 tablespoon sesame seeds (for garnish)

Optional: slices of fresh pineapple for grilling

Marinate the Chicken: In a mixing bowl, combine soy sauce, brown sugar, pineapple juice, minced garlic, grated ginger, rice vinegar, and sesame oil. Whisk until the sugar is dissolved. Place chicken thighs in a large zip-top bag or shallow dish, pour the marinade over the chicken, and seal. Refrigerate for at least 2 hours or ideally overnight.

    Preheat the Grill: Heat your grill to medium-high heat. If using a stovetop grill pan, preheat it over medium heat and brush with a bit of oil to prevent sticking.

      Grill the Chicken: Remove the chicken from the marinade (reserve the marinade for later). Place chicken skin-side down on the grill. Cook for about 7-10 minutes on each side, or until the skin is crispy and the chicken reaches an internal temperature of 165°F (75°C).

        Reduce the Marinade: While the chicken is cooking, pour the reserved marinade into a small saucepan. Bring it to a boil and then let it simmer for about 10 minutes until it thickens slightly. This will be your sauce.

          Optional Pineapple Grilling: If using, place fresh pineapple slices on the grill. Grill each side for about 2-3 minutes until caramelized and golden.

            Serve: Once the chicken is cooked, remove it from the grill and let it rest for a few minutes. Drizzle the thickened sauce over the chicken and garnish with chopped green onions and sesame seeds. Serve with grilled pineapple on the side.
