2 cups whole wheat flour

1 teaspoon baking soda

1/2 teaspoon baking powder

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/2 teaspoon salt

1/2 cup unsweetened applesauce

1/2 cup Greek yogurt (plain or vanilla)

1/2 cup honey or maple syrup

3 large eggs

2 teaspoons vanilla extract

3 cups grated carrots (about 4-5 medium carrots)

1/2 cup chopped walnuts or pecans (optional)

1/2 cup raisins or dried cranberries (optional)

Zest of 1 orange (optional for added flavor)

Instructions
 

Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan or line it with parchment paper.

    In a large bowl, whisk together the whole wheat flour, baking soda, baking powder, cinnamon, nutmeg, and salt until well mixed.

      In another bowl, combine the applesauce, Greek yogurt, honey (or maple syrup), eggs, and vanilla extract. Beat until smooth and well combined.

        Gradually add the wet mixture to the dry ingredients, stirring until just combined. Be careful not to overmix.

          Fold in the grated carrots, nuts (if using), raisins, and orange zest until evenly distributed throughout the batter.

            Pour the batter into the prepared baking pan, smoothing the top with a spatula.

              Bake in the preheated oven for about 30-35 minutes or until a toothpick inserted in the center comes out clean.

                Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
