Ingredients
  

1 tablespoon olive oil

1 medium onion, diced

1 bell pepper (any color), diced

2 cloves garlic, minced

1 pound ground turkey or lean ground beef

2 teaspoons taco seasoning

4 large eggs

1 cup cherry tomatoes, halved

1 can (15 oz) black beans, drained and rinsed

1 cup corn kernels (fresh, frozen, or canned)

Salt and pepper, to taste

1 avocado, diced

Fresh cilantro or parsley, for garnish

Lime wedges, for serving

Instructions
 

Sauté Vegetables: In a large skillet over medium heat, add the olive oil. Once hot, add the diced onion and bell pepper. Sauté for about 5 minutes until they start to soften.

    Cook the Meat: Add the minced garlic and ground turkey (or beef) to the skillet. Cook until the meat is browned and cooked through, breaking it apart with a spatula, about 5-7 minutes. Drain any excess fat if necessary.

      Season the Mixture: Stir in the taco seasoning, making sure to coat the meat and vegetables evenly. Cook for an additional minute until the seasoning is fragrant.

        Add Remaining Ingredients: Gently fold in the halved cherry tomatoes, black beans, and corn. Season with salt and pepper to taste. Let the mixture cook for an additional 2-3 minutes until heated through.

          Create Wells for Eggs: Make 4 small wells in the mixture using a spoon. Crack an egg into each well.

            Cover and Cook: Cover the skillet with a lid and reduce the heat to low. Cook for about 5-7 minutes, or until the egg whites are set but the yolks are still runny (or to your desired doneness).

              Garnish and Serve: Remove from heat and top with diced avocado and fresh cilantro or parsley. Serve with lime wedges on the side for a zesty finish.
