Ingredients

1 lb ground beef (or ground turkey)

1 medium onion, finely diced

2 cloves garlic, minced

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) corn, drained

1 can (10 oz) diced tomatoes with green chilies

1 packet (approximately 1 oz) taco seasoning

1 cup chicken broth (or vegetable broth for a vegetarian option)

1 block (8 oz) cream cheese, softened

1 cup sharp cheddar cheese, shredded

1/2 cup sour cream

Salt and pepper, to taste

Optional toppings: fresh chopped cilantro, avocado slices, lime wedges, and crunchy tortilla chips

Instructions

Brown the Meat: In a large skillet set over medium heat, add the ground beef (or turkey), finely diced onion, and minced garlic. Sauté until the meat is completely browned and the onions become translucent, about 5-7 minutes. Drain any excess fat from the skillet.

Combine in Crockpot: Transfer the browned meat mixture into the crockpot. Incorporate the rinsed black beans, drained corn, diced tomatoes with green chilies, taco seasoning, and chicken broth. Use a spoon to stir and ensure all ingredients are evenly mixed.

Creamy Addition: Cut the cream cheese into small cubes and scatter them over the surface of the mixture in the crockpot. Avoid stirring at this stage to maintain the cream cheese's integrity.

Slow Cook: Secure the lid on the crockpot and set it to cook on low heat for 6-8 hours or on high heat for 3-4 hours. This will allow the flavors to meld beautifully while softening the cream cheese.

Stir in Creaminess: About 30 minutes before you are ready to serve, add the shredded cheddar cheese and sour cream into the soup. Stir gently until both are fully melted and the soup achieves a creamy consistency. Taste the soup and adjust with salt and pepper as desired.

Serve and Enjoy: Once cooked to perfection, ladle the hearty soup into bowls. Enhance your serving with a sprinkle of fresh cilantro, slices of avocado, a squeeze of lime, and some crunchy tortilla chips for added flavor and texture.

Prep Time: 15 minutes | Total Time: 6-8 hours | Servings: 6 servings

Optional Presentation Tips: Serve the soup in colorful bowls and arrange the toppings on a platter for guests to customize their servings. A sprig of cilantro can add a charming touch to each bowl.
