1 lb lean ground beef

1 medium onion, finely diced

2 cloves garlic, minced

4 large potatoes, peeled and thinly sliced

1 cup shredded sharp cheddar cheese

1 cup sour cream

1 cup low-sodium beef broth

1 teaspoon smoked paprika

1 teaspoon dried oregano

Salt and freshly ground black pepper to taste

2 tablespoons extra-virgin olive oil

Fresh parsley, chopped, for garnish (optional)

Instructions
 

Begin by preheating your oven to 375°F (190°C).

    In a large skillet over medium heat, add the olive oil. Once hot, sauté the diced onion until it becomes soft and translucent, which should take about 5 minutes.

      Stir in the minced garlic and continue to cook for about 1 minute, until fragrant. Be careful not to let the garlic burn.

        Add the ground beef to the skillet, using a wooden spoon to break it apart. Cook until it is browned and no longer pink, which should take about 8-10 minutes. Season the beef mixture with smoked paprika, oregano, salt, and pepper according to your taste preferences.

          In a separate bowl, whisk together the sour cream and beef broth until fully combined. Set this mixture aside for later use.

            Take a greased 9x13 inch baking dish and layer half of the sliced potatoes at the bottom. Spread half of the cooked beef mixture evenly over the potatoes.

              Drizzle half of the sour cream and beef broth mixture over the beef layer, ensuring it covers well.

                Repeat the layering process with the remaining potatoes, followed by the remaining ground beef, and finish by pouring the leftover sour cream mixture on top.

                  Generously sprinkle the shredded sharp cheddar cheese over the entire casserole.

                    Cover the baking dish with aluminum foil and place it in the preheated oven. Bake for 30 minutes.

                      After 30 minutes, carefully remove the foil and continue baking for an additional 15 minutes, or until the potatoes are tender and the cheese is melted, bubbly, and slightly golden.

                        Once done, remove the casserole from the oven and allow it to rest for about 10 minutes before serving. For a fresh touch, garnish with chopped parsley right before serving.
