  • 1 pound ground beef
  • 4 medium-sized potatoes peeled and diced
  • 1 medium onion finely chopped
  • 2 cloves garlic minced
  • 15 ounces canned diced tomatoes undrained
  • 1 cup beef broth
  • 1 cup frozen mixed vegetables
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • to taste salt and pepper
  • 1 cup shredded cheddar cheese
  • 2 tablespoons olive oil

Instructions

  • Preheat your oven to 350°F (175°C).
  • Heat olive oil in a large skillet over medium heat, then sauté onion and garlic until translucent.
  • Add ground beef, breaking it apart as it cooks until browned, about 5 to 7 minutes.
  • Stir in diced tomatoes, beef broth, potatoes, mixed vegetables, thyme, paprika, salt, and pepper.
  • Transfer the mixture to a greased 9x13-inch casserole dish and spread evenly.
  • Cover with aluminum foil and bake for 45 minutes.
  • Remove foil, sprinkle cheese on top, and bake for an additional 15 minutes until cheese is melted.
  • Allow to cool for a few minutes before serving.
