  • 1 medium onion finely diced
  • 2 cloves garlic minced
  • 1 large carrot peeled and diced
  • 1 stalk celery diced
  • 1 red bell pepper diced
  • 1 medium zucchini diced
  • 1 can diced tomatoes including their juices
  • 6 cups vegetable broth or water
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • ½ teaspoon dried oregano
  • ½ teaspoon dried thyme
  • 2 tablespoons extra virgin olive oil
  • Salt and freshly ground black pepper to taste
  • Fresh parsley finely chopped (for garnish)

Instructions

  • Heat the olive oil in a large pot over medium heat.
  • Add the diced onion, carrot, celery, and red bell pepper; sauté for 5-7 minutes until softened.
  • Incorporate the minced garlic and cook for an additional minute.
  • Add the lentils, diced tomatoes, vegetable broth, cumin, paprika, oregano, and thyme; stir to combine.
  • Bring to a boil, then reduce heat to low and cover; simmer for 30-35 minutes until lentils are tender.
  • Add the diced zucchini during the last 10 minutes of cooking.
  • Season with salt and pepper to taste; add more broth or water for a thinner consistency if desired.
