Ingredients
  

8 rice paper wrappers

1 cup cooked quinoa

1 cup shredded carrots

1 cup cucumber, julienned

1 cup red bell pepper, thinly sliced

1 cup green bell pepper, thinly sliced

1 cup avocado, sliced

1 cup fresh cilantro leaves

1 cup bean sprouts

For the Peanut Sauce:

1/3 cup peanut butter (crunchy or smooth)

3 tablespoons soy sauce

2 tablespoons lime juice

1 tablespoon honey (or maple syrup for vegan)

1 teaspoon garlic powder

1 teaspoon ginger, grated

Water, as needed for desired consistency

Instructions
 

Prepare the Veggies: Rinse and chop all vegetables as specified in the ingredient list. Set aside on a large platter.

    Make the Peanut Sauce: In a bowl, combine peanut butter, soy sauce, lime juice, honey, garlic powder, and ginger. Mix well until combined. Add water a tablespoon at a time until the sauce reaches your desired consistency. It should be creamy but pourable. Set aside.

      Soften the Rice Paper: Fill a shallow dish with warm water. One at a time, immerse a rice paper wrapper in the water for about 10-15 seconds until it is pliable, then lay it flat on a clean, damp kitchen towel.

        Assemble the Rolls: On the bottom third of the softened wrapper, start layering the ingredients: a small handful of quinoa, a few pieces of each vegetable (carrots, cucumber, bell peppers, avocado), cilantro leaves, and a few bean sprouts. Don't overfill; you want to be able to roll them up easily.

          Roll the Wrapper: Fold the sides of the rice paper over the filling and then roll it away from you, tucking it tightly as you go. Repeat the process for the remaining ingredients.

            Serve: Place the rolls on a serving platter. Drizzle with the peanut sauce or serve it on the side for dipping.

              Enjoy: These rolls are perfect as a snack, appetizer, or light meal. Feel free to refrigerate any leftovers in an airtight container with a damp paper towel to keep them fresh.
