  • 4 large russet potatoes
  • 1 medium onion
  • 3 cloves garlic
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 1 cup sharp cheddar cheese
  • ½ cup sour cream
  • ¼ cup green onions
  • 4 slices bacon
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon dried thyme
  • ½ teaspoon smoked paprika

Instructions
