1 lb (450g) boneless, skinless chicken breast, cubed

1 cup orzo pasta

2 cups low-sodium chicken broth

1 cup spinach, chopped

1 cup cherry tomatoes, halved

1/2 cup feta cheese, crumbled

1/4 cup Greek yogurt

2 cloves garlic, minced

1 tablespoon olive oil

1 teaspoon dried oregano

Salt and black pepper to taste

Fresh basil leaves, for garnish

Instructions
 

Cook the Orzo: In a medium pot, bring the chicken broth to a boil. Add the orzo and cook according to package instructions until al dente (about 8-10 minutes). Drain and set aside.

    Prepare the Chicken: In a large skillet, heat olive oil over medium heat. Add the cubed chicken breast and season with oregano, salt, and pepper. Cook until the chicken is browned and cooked through, about 6-8 minutes.

      Add Vegetables: Stir in the minced garlic and cook for 1 minute until fragrant. Add the chopped spinach and halved cherry tomatoes to the skillet, cooking until the spinach is wilted, about 2-3 minutes.

        Combine Ingredients: Lower the heat and add the cooked orzo to the skillet, stirring to combine everything well. Remove from heat.

          Finish with Cheese and Yogurt: Stir in the crumbled feta cheese and Greek yogurt until the mixture is creamy and everything is evenly coated. Adjust seasoning with additional salt and pepper as needed.

            Serve: Serve warm, garnished with fresh basil leaves for a pop of flavor and color.
