Ingredients
  

2 medium sweet potatoes

1 pound ground turkey

1 cup black beans (canned, rinsed and drained)

1 cup corn (canned or frozen, thawed)

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon cumin

Salt and pepper to taste

½ cup diced bell pepper (any color)

½ cup diced onion

1 tablespoon olive oil

½ cup shredded cheddar cheese (optional)

Fresh cilantro for garnish (optional)

Instructions
 

Preheat your oven to 400°F (200°C).

    Wash the sweet potatoes and poke holes in them with a fork to allow steam to escape. Place the sweet potatoes on a baking sheet lined with parchment paper.

      Bake the sweet potatoes in the preheated oven for about 45-50 minutes, or until they are tender and easily pierced with a fork.

        While the sweet potatoes are baking, heat the olive oil in a large skillet over medium heat.

          Add the diced onion and bell pepper to the skillet, and sauté for about 3-4 minutes until softened.

            Add the ground turkey to the skillet, stirring to break it up, and cook for about 5-7 minutes until browned and cooked through.

              Stir in the black beans, corn, smoked paprika, garlic powder, cumin, salt, and pepper. Cook for another 2-3 minutes until everything is heated through and well combined.

                Once the sweet potatoes are done, let them cool slightly before handling. Cut each sweet potato in half lengthwise and scoop out a little bit of the flesh, creating a small boat for the filling.

                  Gently mix the scooped-out sweet potato flesh into the turkey mixture, allowing for a creamy texture.

                    Stuff each sweet potato half with the turkey mixture. If desired, sprinkle shredded cheddar cheese on top of each stuffed sweet potato.

                      Return the stuffed sweet potatoes to the oven for an additional 5 minutes, or until the cheese is melted and bubbly.

                        Remove from the oven, garnish with fresh cilantro if desired, and serve warm.
