Ingredients

For Honey BBQ Chicken:

4 boneless, skinless chicken breasts

1 cup barbecue sauce (low sugar)

1/4 cup honey

2 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon black pepper

1 teaspoon salt

1 tablespoon olive oil

For Creamy Garlic Parmesan Potatoes:

1.5 pounds baby potatoes, halved

3 tablespoons butter

4 cloves garlic, minced

1 cup heavy cream

1/2 cup grated Parmesan cheese

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh parsley for garnish (optional)

Instructions

Prepare the Honey BBQ Sauce:

    - In a bowl, combine the barbecue sauce, honey, minced garlic, smoked paprika, black pepper, and salt. Mix well.

      Marinate the Chicken:

        - Place the chicken breasts in a resealable plastic bag or a shallow dish. Pour half of the honey BBQ mixture over the chicken, ensuring they are well coated. Marinate in the refrigerator for at least 30 minutes (or up to 4 hours for more flavor).

          Cook the Chicken:

            - Preheat your grill or stovetop grill pan over medium-high heat. Remove chicken from the marinade and brush with olive oil. Grill the chicken for 6-7 minutes on each side, or until fully cooked (internal temperature reaches 165°F/75°C). Brush with the remaining BBQ sauce during the last few minutes of cooking.

              Boil the Potatoes:

                - In a large pot, add the halved baby potatoes and cover with water. Add a pinch of salt and bring to a boil. Cook for about 15-20 minutes, or until the potatoes are fork-tender. Drain and set aside.

                  Make the Creamy Garlic Sauce:

                    - In a large skillet over medium heat, melt the butter. Add minced garlic and sauté for about 1 minute until fragrant. Pour in the heavy cream and stir to combine. Let it come to a gentle simmer.

                      Add Cheese and Seasoning:

                        - Stir in the grated Parmesan cheese and Italian seasoning, mixing until the cheese is melted and the sauce is creamy. Season with salt and pepper to taste.

                          Combine Potatoes and Sauce:

                            - Add the drained potatoes into the skillet and gently stir them into the creamy garlic sauce until well coated.

                              Serve:

                                - On a plate, serve the grilled honey BBQ chicken alongside a generous portion of creamy garlic Parmesan potatoes. Garnish with fresh parsley if desired.
